A very special members very simple bread recipe
Simple and life affirming bread
Servings: 6 people
Ingredients
- 1 tbsp Active dry yeast
- 1 tbsp Sugar any kind will do
- 1 tbsp Salt
- 2 cups Warm Water warm but not over 110°F
- 5 & 1/2 to 6 Cups Flour any kind will do
Instructions
- Mix- In a big bowl, mix together the yeast, sugar, salt and water. Let stand until the yeast is dissolved. Let sit for 5 min. Gradually add the flour, one cup at a time to the liquid and mixing thoroughly until the dough pulls away fromthe sides of the bowl and a big ol' lump forms.
- Knead- Dump the dough lump out onto a well-floured surface and scrape out thebowl. Knead the dough for 7 minutes, sprinkling only just enough flour on your kneading surface, dough and hands to prevent sticking. Let the doughrest for 5 min while you rub olive oil on the sides of the mixing bowl. Knead the dough again for about 3 to 5 more minutes until it feels springy. Return the dough to the bowl and spin it aroung in the oily bowl to coat it.
- DoNothing! Let It Rise: Cover with a damp towel and keep warm until the dough doubles in bulk, about 1 to 2 hours. It will rise faster in a warmer space.
- Punchdown & Preheat – Pre heat oven to 400°F. Uncover and Punch the dough once with your flour dusted fist to knock out any air bubbles. Divide the dough into the size and shape loaves you like. No wrong answers. Place the loaves on a cookie sheet or baking stone sprinkled with flour or cornmeal (optional). Let the loaves rest for 10 to 15 minutes.Embellishin any way: lightly slash or poke the tops of the loaves, brush themwith an egg wash or melted butter or cold water, add seeds, herbs orspices like coarse salt!
- Bake- Bake at 400°F for 35 to 45 minutes, until the loaves are goldenbrown and sounds hollow when tapped. Smaller loaves cook quicker. Let cool for 5 min then EAT!
