Egyptian, Third Intermediate Period
INGREDIENTS:
- 1 tablespoon active dry yeast
- 1 tablespoon sugar (you can do more for sweeter bread it’s cool)
- 1 tablespoon salt
- 2 cups of warm water with a temperature not over 110°F
- 5 1/2 to 6 cups All-Purpose or Bread Flour (or work with what you got flour wise, bread will still happen most likely)
INSTRUCTIONS:
1. Mix. In a nice BIG mixing bowl, mix together the yeast, sugar, salt and water. Let stand until the yeast is dissolved and bubbly foamy on top. This takes about 5 minutes. Then gradually add the flour, one cup at a time to the liquid and mix in a big circle hoop around the bowl adding more flour until the dough pulls away from the sides of the bowl in one big clump. This is a good time to think spells or wishes into the bread.
2. Knead. Dump the dough out onto a well-floured surface and scrape out the bowl if you must. Knead the dough for about 7 minutes (also a good time to put intentions into the bread), sprinkling only enough flour on your kneading surface, dough and you to prevent sticking. It’ll feel springier then when you started. Then let the dough rest while you rub olive oil on the sides of the now relatively clean mixing bowl. Knead the dough again for 3 more minutes. Return the dough to the bowl and spin it a bit to coat the outside with the oil on the bowl.
3. Do Nothing! Let It Rise: Cover with a damp towel and keep warm until your dough doubles in size (this is why the bowl had to be big), about 1&1/2 to 2 hours.
4. Punch down. Punch down the dough with your fist to knock out any air bubbles. Divide the dough into the size and shape loaves you like. Place the loaves on a cookie sheet or baking stone or whatever sprinkled with flour or cornmeal (optional). Let the loaves rest for 15 to 20 minutes.
Embellish in any way: lightly slash or poke the tops of the loaves, brush them with an egg wash or melted butter or cold water, add seeds, herbs or spices like coarse salt!
5. Bake. Bake at 400°F for 35 to 45 minutes, until the loaves are golden brown and sounds hollow when tapped. Let cool for 5 min then EAT!ms. Keep your language concise but descriptive enough to keep readers engaged. This is where the substance of your article begins to take shape.
